Left unsupervised for a Sunday, my mum and I can spend all day in the kitchen, absentmindedly cooking, reading cookbooks and talking about cooking - I don’t usually step in and cook myself until after she’s finished though, because like all good cooks, mum likes people to Get Out of the Way and Not Interfere, unless she’s teaching them. So I watch, and I bide my time.
This evening, though, she ground to a halt at about 5:30 so I made her a cup of tea and very quietly went about a piecrust, distracting her all the while with talk of TWITTER and COOKING BLOGS and eventually she told me about Kate McDermott, and the Art of the Pie. Kate McDermott turns out to be everything I have ever in my life looked for in a pie blogger! That is, she understands that pie making is a magical blend of precision and Good Thoughts.
When I first pitched up in America again I decided to learn how to make pies properly, and lord knows, it took me about 3 months to really figure it out. Why did I become so obsessed with pies? Ok,because it’s really hard, until you get it, at which point it’s easy but looks hard. Everyone likes pie, and you can make a pie out of anything. It’s the ultimate waste-not dish. It smacks of gluts and harvests. You’ll never get it perfect. And best of all, you can bring someone a pie. Have you ever done that? It’s worth learning how to make pie just to be able to bring it over when you visit.
